Homemaker Monday: Amazing Cake Balls!

YOURS: This week's "YOURS" goes to Kendra over at My Insanity. She's been featured here before, but I couldn't resist giving her this spot again so I could show you the amazing Christmas cookies she put together! Here, check out THIS particular cookie...


I was astounded when I saw these photos, as were my kids when I showed them. I would love to try this next year. Maybe life will be simpler. Okay, who am I kidding. I'll have two almost-year-olds, but I can think wishfully, can't I?

MINE: I am going to talk about cake balls again. I mentioned them in a previous Sabbath-Prep Saturday post and said that I was dying to make them, so I did. And they turned out better than I could have ever imagined. They're fun and easy, too. Here's how you do it...

INGREDIENTS:
One box of white or chocolate cake mix
Eggs
Oil
One can of frosting
One bag of chocolate chips

1. Make and bake the cake, following the manufacturers instructions, in any size pan...

(It helps if you wear a glittered pink Santa hat.)


(Make sure to lick the spatula and mixers.)


2. Dump out the cake into a large mixing bowl.
3. Heat up the frosting in the microwave for about 45 seconds, or until it can be poured into the crumbled cake.
4. Pour the frosting into the crumbled cake and stir until well blended. It should resemble some kind of paste.
5. Cover cookie sheets with wax paper and let the mix cool for about an hour, or until it can be easily rolled into balls.
6. Roll into cookie-sized balls and place on wax paper.
7. Freeze for two hours.
8. When cake balls are ready, in a double boiler or on very low heat, stirring constantly, melt the package of chocolate chips.
9. Roll the cake balls in the chocolate and place back on the wax paper...


(Your fingernails will look like this, even after you wash your hands...)


10. Serve when cool in a little parfait dish...


...or on a cake platter...


I have to tell you that this was a HUGE hit at our Sunday dinner. Many people were moaning and rubbing their stomachs because they had gourged themselves on these cake balls. While this is not necessarily a good thing, it does prove that they are extremely delectable. We also used these variations to the recipe:

Chocolate cake with chocolate frosting dipped in melted chocolate chips
Chocolate cake with chocolate frosting dipped in melted peppermint bark
Spice cake with vanilla-cinnamon frosting dipped cream cheese frosting

One last note. Try to refrain from actually saying the words "cake balls" around teenage boys. Trust me.

  5. I love cake balls! I've only done them once, with red velvet cake and cream cheese frosting dipped in chocolate almond bark. So yummy! Your other variations sound great.

  8. Those look great Jen! I'll have to try them. It looks like something my teens could even make and would have fun doing!

    And your comment about saying "cake balls" in front of the teenagers? HA HA We can't say cheese ball or any other form of ball without them (and maybe me, I'm not sayin')errupting into roars of laughter...even the little boys!! ;)~

  10. Oh and Jen...I'm curious which type of wheat you are using for your pancakes, bread, rolls, etc. Let me know please! (and share any other wheat tips you have as I'm new this but plan to use a lot of it!)

  12. Thank you for the feature, and for the nice words! Your cake balls look fantastic (similar to Bakerella's cupcake pops recipe, which are very yummy!). I've been wanting to try something like that with lemon cake this week, and it just hasn't happened, yet. Maybe you will get me motivated!

I made cake balls for a party in January and one of the variations I made that was particularly popular was german chocolate cake, mixed with the canned german chocolate frosting (contains coconut and nuts), and then the balls dipped in milk chocolate dipping chocolate. The other kind I made were cherry chip cake dipped in white chocolate.
