No-Bake Blueberry Cheesecake

This rich and easy cheesecake recipe was shared with me by Hermana Layton, an amazing missionary who happens to be my neighbor and dear friend. I could blog for days about the things she's taught me over the few short weeks I've know her, and I probably will. Thank you, Hermana Layton. You're the best!

No-Bake Blueberry Cheesecake

Ingredients:

1 Graham cracker crust, store-bought or homemade (I used THIS recipe)

For the filling:
2 8-oz. boxes of cream cheese, softened
1 can sweetened condensed milk
The juice of one small lime
1 teaspoon vanilla

For the blueberry topping:
¼ cup cold water
1 tablespoon corn starch
2 cup blueberries
½ cup sugar

Directions:

1. With an electric mixer beat cream cheese, sweetened condensed milk, lime juice and vanilla until creamy, then spoon into cooled graham cracker crust, leaving a raised lip around the edge to contain the fruit topping. Refrigerate for at least 2 hours.

2. In a blender, combine 1 cup blueberries, cold water, corn starch and sugar. Blend until smooth.

3. In a small sauce pan, cook the blender mixture on medium heat, stirring constantly, until thickened. Let cool, then add the remaining 1 cup of blueberries. Pour this over the cheesecake. Let cool until the topping has thickened.

  1. This has nothing to do with the cheesecake (although it looks amazing!). I read your story about your life and then I read the talk you gave. It was exactly what I needed to hear. I have been harboring negativity and anger towards people and I needed to read that talk. Thank you! From a mommy of 3 in little old Spanish Fork Utah.

  3. My mom makes this and it's delicious. When I was a teen, she told us that she would make us as many pies as we wanted, as long as we picked the blackberries for them. We literally had that pie (with blackberries) every night for a month! We were pretty scratched up at the end of the month, too. And kind of sick of blackberries, I don't think I've eaten a blackberry since then, lol.
