Happy Monday! I shared my recipe for Carrot Cake Muffins. This recipe is gluten free, but can be made with "regular" flour if you don't have issues with gluten. These muffins are nice and moist because they have 3 cups of shredded carrots plus pineapple, raisins and coconut. Thanks for hosting!
