YOURS: I have decided to do something a little different with the "YOURS" portion of Homemaker Monday. I will choose one link each week and apply it to my life during the week, then report on it in this section, along with the following week's "YOURS". I know, it sounds complicated. Here's an example. This week's "YOURS" goes to Kristen over at Frugal Antics of a Harried Homemaker. Her post was on how to make instant oatmeal. I am in the process of trying to banish most store-bought cereals for our home, and I know that this would really come in handy. All I would have to do before school every day would be to show the kids where the instant oatmeal packets are, put on a kettle of water to boil, and make sure to supervise the little ones. This is definitely something I want to apply to my life this week, and that is exactly what I plan on doing....and I will report on it next week, and hopefully take pictures. I will also pick another featured link to apply to my life for the following week. Make sense? If not, just stick around and we'll all get the hang of it.
Soooo, as I was saying before, I chose Kristen for her instant oatmeal recipe. She even has ideas for many different flavors even the most finicky kids are sure to love. MINE: I posted this recipe on Saturday, but because one of the twins had to go the night clinic for an ear infection this evening, I am using this post for Homemaker Monday. Forgive me...
I think the thing I miss most about being a vegan is cheese. That's why recipes like the following are so satisfying. I made this today for my mom, sister, and brother between two of our worldwide church conference session. These were some of the comments:
BROTHER: I don't think I've ever told anybody this about food before, but this is magnificent!
SISTER: This tastes just like cheese!
BROTHER (again): I would so much rather eat this than cheese any day.
MOTHER: This is really good, Jenny.
I just wanted to make something vaguely enjoyable for my family, but I did not expect a reception like this. Here's the photo...
...and here's the recipe...
Nacho "Cheese" Sauce:
Ingredients:
2 cups cashews
1 cup water
1/3 cup red bell pepper, with ribs and seeds removed, then diced
2 1/2 tablespoons onion, diced
2 tablespoons fresh cilantro
1 clove garlic
1 teaspoon soy sauce or nama shoyu
1/4 sea salt
1/3 to 1 whole red jalapeno, depending on how hot you want it
1 teaspoon nutritional yeast
Directions:
Place all ingredients in a Vitamix or other powerful blender and combine until smooth.
Serve with chips, on crackers, on manna bread with avocado and tomato or eat it with a spoon straight out of the bowl!

Homemaker Monday: Vegan Nacho "Cheese" Sauce

one of the reasons i'm a vegetarian not a vegan is because i can't live without cheese. i've tried rice milk and soy milk cheese, but have never been impressed. i definitely have to try this.

ReplyDeleteI'm curious...are you still losing weight at the rate you were when you first decided to become vegan? Don't feel like you have to answer this question. It's kind of personal. :)
I think that is cool that you are challenging yourself with something new each week. Way to go! I'll enjoy watching your successes.

ReplyDeleteThanks! I am checking if I can use nutritional yeast due to candida issues, but I can't wait to make this! We will have to use a different nut due to allergies, but I am hopeful!
