Vegan Lemon or Lime "Cheese" Cake

By now, you know that when I use quotation marks, I don't really mean the recipe has, in this case, cheese. It's just a cheese look-alike, but you won't believe how delecable this "cheese" cake is. It makes being a vegan very, very easy...


So....here's to all those ladies out there who came to my plant food class and wanted this recipe. Enjoy eating "cheese" cake guilt-free!

Lemon or Lime "Cheese" Cake
Ingredients for the crust:
2 cups raw macadamia nuts
1 cup shredded, unsweetened dry coconut
1 tablespoon lemon or lime zest
2 tablespoons fresh lemon or lime juice
2 teaspoons vanilla
1 teaspoon sea salt
4 packets stevia or 4 teaspoons sugar
2 tablespoons agave nectar
1 tablespoon sesame oil or vegetable oil

Directions for the crust:
Pulse these ingredients in a food processor until well combined, but still a bit chunky. Make sure not to overprocess or the nuts will become oily.

Line a tart pan or pie plate with plastic wrap, then press this mixture into the pan. Place in the freezer to chill until firm.

Ingredients for the filling:
1 1/2 cups cashews, soaked for at least one hour
1/4 cup + 2 tablespoons lemon or lime juice
1/4 cup + 2 tablespoons agave nectar
1/4 cup + 2 tablespoons coconut oil, melted
1/4 cup water
1 teaspoon vanilla
1/4 teaspoon nutritional yeast
1/4 teaspoon sea salt
2 tablespoons lemon or lime zest

Directions for the filling:
Blend all of the ingredients in a Vitamix until smooth, spread into the crust, and place in the freezer to chill until firm. Store in the freezer until about 20 minutes before serving. Remove the pie from the pan by lifting up the plastic wrap and set on a pretty plate. (It's easier to cut this way.)

Enjoy!

P.S. If you would like to make a fruit topping for this, blend up some blueberries or strawberries with agave nectar in a blender, add fresh blueberries or cut-up strawberries to this mixture and chill. Pour it over a slice right before serving. It is DELICIOUS served this way!

  2. Could I have some more please!!! It really was SO yummy! So funny story, well not really, but you will think it is interesting. After eating all that wonderful food at your house we went to Mechy's for lunch the next day. I haven't eaten that much meat in a while (two- yes I ate two quesadillas, but they put meat on them too) and I was SO sick that night. I didn't even eat dinner and went straight to the store to buy a papaya. My favorite thing to eat: with lime, honey and sesame seeds. I don't know if I will ever eat there again, the only thing green was the limes =) Gross!

  4. BarbieMat, you could probably use melted buter as a substitute for the coconut oil, but I'm not sure exactly how it would work. They have coconut oil at Walmart. You want I should bring you some when I return home?

  6. I have everything I need to make this except cashews since my son is allergic! Would you recommend using anything else?

  7. Orange Crush Kitchen, I don't know what else you could use besides cashews. That is the base. Is he allergic to all nuts? Because if not, you could try brazil nuts or hazel nuts. Sorry I can't be of more help!
