4 cups fresh organic blackberries
12 pitted dates
Directions:
The only step: Place ingredients in a Vita-Mix blender and blend until smooth. (I'm not sure this will work in a regular blender.)
Place in a container in the fridge and enjoy for 7 to 10 days.
This blackberry jam is SOOOOOO good for you as all of the enzymes remain intact because the blackberries haven't been cooked, there is no refined sugar, and the seeds, which are rich in anti-oxidants, are left in the jam. Honestly, it is a little gritty, but to me, so worth it. If you have tons of blackberries and want to make a lot of jam, this can be frozen. Enjoy!
