Homemaker Monday: Twin's Birthday Cake Recipe with Cake-Covered-Face Photos!

MINE:
I can't believe it's been a year. The twins turned one on Valentine's Day! As they were both breach during my entire pregnancy, my doctor insisted that we schedule a c-section and I couldn't have been more thrilled that Valentine's Day just happened to be the most convenient day for both of us. During the days the preceded the twin's delivery, I often wondered what day they really would have been born on. Surely it wouldn't have been Valentine's Day. That would have been too perfect. But, as luck would have it, on the day of the c-section as I was getting out of my husband's truck to go into my chiroractor's office for a last minutes adjustment right before the surgery, I did a little hop onto the pavement from the high seat of the Ford F150. I felt an odd pop, went into the chiropractor's office, then, as he adjusted me, began GUSHING all over the table. I profusely apologized, he said, "Wow! This is exciting!" and I went back to the truck to tell my husband that we would need to go back home to get a change of clothing and that, indeed, the twins were really meant to be born on Valentine's Day!

So, here are the pictures of their first birthday cake and the recipe in case you would like to make some, too. No, the recipe is not vegan, but it does have fresh bananas and strawberries to add a small fraction of nutrition in an otherwise artery-clogging, but delicious and moist, concoction. Enjoy!

Here's the cake that Joseph and Hyrum ate!

INGREDIENTS
1 1/2 cups mashed bananas
1/2 teaspoon vanilla extract
1 1/2 cups white sugar
1 cup vegetable oil
3 eggs
1 3/4 cups all-purpose flour
1 1/2 teaspoons baking soda
1/4 teaspoon salt
6 tablespoons unsweetened cocoa powder

DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Grease and flour one 9 x 13 inch pan.
In a large bowl, combine beets, eggs, vanilla, oil, and sugar. Mix with an electric mixer on low speed until well combined.
In a separate bowl, mix together flour, soda, salt, and cocoa. Add to the creamed mixture, beating together well. Pour batter into prepared pan.
Bake for 25 to 30 minutes until done. Cool and frost with your favorite icing. For Joseph and Hyrum's cake we used homemade chocolate frosting and fresh strawberry frosting. For the recipe, click HERE. Hope you enjoy this as much as Joseph and Hyrum did!

There is nothing like the 1st birthday look of cake in the face. Hyrum has it mastered well. Congratulations on their 1st birthday.

The birthday cakes sound yummy. My son still manages to fall asleep for almost every major celebration! His last birthday cake was a flop :( but luckily two-year-olds don't know they're supposed to get cake on their birthday. ;)
