Black Bean and Green Chili Salad

I didn't feel like going to the store for groceries today, so the 15-year-old girl and I scrounged through my mother's kitchen cabinets and came up with this dinner...

Black bean and green chili salad, sauteed asparagus and fresh strawberries

The strawberry preparation is simple. Just wash well, and remove the greens...

The asparagus preparation is simple as well. Just wash asparagus and saute in butter, then add salt...

Just make sure your brother doesn't eat half of them before they are served...

To make the salad, round up the following ingredients...

6 cups of spring greens
15 oz can of black beans (about 2 cups)
1 small can of chopped green chili (about 1/2 cups)
1 cup of cubed gouda cheese
6 hard-boiled eggs, chopped
Ranch dressing
Flax seeds

Toss first five ingredients...

...then serve with dressing and sprinkle on flax seeds...

...and if you're really lucky, you'll be having a good hair day when you serve this. This is a rare occurrence, so I am sharing, and this is the best shot I could get...

looks soooo good! i love when you can make something so delicious without having to run to the store. i had a bunch of mushrooms that i needed to use so i made mushroom bruschetta-very yummy. your hair looks cute too! :)

Your hair is a little messy - but not BAD. Have you seen some of the pics. of me?!?!! Like when I had only been out of the shower 20 minutes on Halloween, when my adorable grand daughter arrived at our front door - and the picture they snaped of me holding her turned out to be the one where her costume showed the best? Or .... yeah.

What is it about brothers and being mooches? Even when I was the cook up at camp, if my brothers happened to be on the grounds, it never failed but they came wandering through snitching - a piece of bacon, of a just baked cookie, or ....

Man do those strawberries look delicious!!! My oh my ...

Are you sure there weren't any choc. chips that needed used up too? o;-p

Bethany, as of late, Bunky has been looking more and more like Ed and it is eerie! I think it's 'cause he's getting fatter than before. Definitely Ed Jr., but don't tell him I said that or he'll get mad...

That looks wonderful! Some of our best meals come from mixing together what we have in our fridge...although it's typically my husband doing the inventing because he's the better cook out of both of us.

UGH! I wish my husband would eat salad for dinner! He's a meat and potatoes type guy so salad just "doesn't fill [him] up".

It looks delicious! I can't wait for the weather to warm so I can get strawberries planted in the garden. Nothing is better than a fresh strawberry!
